Easy Peanut Broccoli Chicken Dish



Last night we had this amazing Asian inspired Peanut Broccoli Chicken Dish. It was super easy to make and it tasted delicious. I am not much of a recipe creator but  I came up with this on my own. I did adapted the peanut sauce from another blog.  I love Asian inspired food. I have put my wok into good use. It is probably about time for another one.  


  • 2 cups cooked rice

  • 2 cups cooked, shredded chicken

  • 1 head of broccoli, cut into bite size chunks

  • 1/2 cup diced green onions

  • 1/2 cup peanuts

  • 1 tsp red pepper flakes (optional)

  • Additional soy sauce (optional)

Sauce Ingredients:

  • 1/4 cup peanut butter

  • 1 tbsp rice vinegar

  • 1 tbsp soy sauce

  • 1 tbsp honey

  • 1/4 tsp sesame oil

  • 2 tbsp hot water (to thin out the sauce)


  1. Add broccoli to boiling water. Boil for 1 minute, drain. Set aside.

  2. Wisk all sauce ingredients in a medium bowl until thin.

  3. In a large pan or wok, add cooked broccoli, diced green onions, peanuts, cooked rice, shredded chicken and sauce.

  4. Cook on med-low until mixed well and heated thoroughly.

  5. Add additional soy sauce if desired.

  6. Add red pepper flakes and serve warm.
